- 1 c. flour
- 1 tsp. salt
- 2 eggs
- 1 c. milk
- 1 Tbsp. shortening
Directions

1Sift flour; measure.

2Add salt and sift again.

3Beat eggs with rotary or electric beater until light and thick.

4Add flour and 1/3 cup of the milk; continue to beat slowly until all the flour is moistened, about 30 seconds.

5Gradually add remaining milk and melted shortening.

6Beat until free from lumps, 1 to 2 minutes. Fill greased muffin pan.

7Divide in 6 to 8 large popovers.

8Bake at 425° for 40 minutes.
