- 2 eggs
- 1 c. milk
- 1 c. flour
- 1/2 tsp. salt
- 1 Tbsp. cooking oil
Directions

1Mix eggs, milk, flour and salt for 1 1/2 minutes with electric mixer.

2Add oil; beat 30 seconds more.

3(Don't overbeat.)

4Fill 6 to 8 well-greased muffin cups 1/2 full.

5Bake in a very hot oven (475°) for 15 minutes; without opening oven, reduce temperature to 350° and bake for 25 minutes longer or until browned and firm. Prick with fork to allow steam to escape.

6Great with butter or use as custard cups.
