  • 2 eggs
  • 1 c. milk
  • 1 c. flour
  • 1/2 tsp. salt
  • 1 Tbsp. cooking oil

Directions

    Mix eggs, milk, flour and salt for 1 1/2 minutes with electric mixer.

    Add oil; beat 30 seconds more.

    (Don't overbeat.)

    Fill 6 to 8 well-greased muffin cups 1/2 full.

    Bake in a very hot oven (475°) for 15 minutes; without opening oven, reduce temperature to 350° and bake for 25 minutes longer or until browned and firm. Prick with fork to allow steam to escape.

    Great with butter or use as custard cups.
