Poppy Seed Bread

  • 1 box SuperMoist cake mix (yellow or butter)
  • 1 small pkg. instant coconut cream or vanilla pudding
  • 1/2 c. coconut
  • 1 c. warm water
  • 4 eggs, slightly beaten
  • 1/2 c. oil
  • 1/4 c. poppy seed

Directions

    Grease and flour pans, 5 mini or 2 large loaf pans.

    Toast coconut in shallow baking pan in 350° oven for 7 to 12 minutes or until lightly browned, stirring frequently.

    Set aside.

    Mix together cake mix, pudding, water, eggs and oil.

    Mix for 1 minute.

    Add poppy seed and coconut.

    Pour into pans.

    Bake in 350° oven.

    Five mini loaf pans, bake about 30 minutes.

    Two large loaf pans, bake about 45 to 60 minutes.
