Poppy Seed Cake

Ingredients
- 2 c. sugar
- 1 1/2 c. vegetable oil
- 2 eggs
- 1 tsp. vanilla
- 3 c. all-purpose flour
- 1 1/2 tsp. baking soda
- 1 tsp. salt
- 1 can evaporated milk (large)
- 1/2 to 3/4 c. poppy seed
- 1 to 1 1/2 c. nuts or raisins (optional)
Directions

1In large mixing bowl, beat sugar and oil; add eggs one at a time; beat.

2Blend in vanilla; set aside.

3In a medium bowl, blend together dry ingredients.

4Alternately add the flour mixture and evaporated milk to large bowl (sugar, oil, eggs).

5When all other ingredients are well mixed, add poppy seed (and nuts or raisins, if any).

6Mix well and pour into greased and floured pans.

7Preheat oven to 350°.

8Bake in tube or Bundt pan at 350° for 1 to 1 1/2 hours or in 2 loaf pans at 350° for 1 to 1 1/4 hours or in four 7 1/2 x 3 1/2 x 2-inch deep loaf pans for 45 to 50 minutes.

9Top of cake may be dusted with powdered sugar, if desired.
