- 1 (18 ounce) box lemon cake mix (not pudding type)
- 1/2 cup oil
- 1 (3 1/2 ounce) package instant coconut cream pudding mix
- 4 eggs
- 2 tablespoons poppy seeds
- 1 cup water
- 1/2 teaspoon lemon extract
Directions

1Beat cake mix, oil, pudding mix, and eggs until well blended.

2Stir in water, poppy seeds and lemon extract.

3Pour into 2 well greased loaf pans.

4Bake at 350°F for approximately 40 minutes or until they test done.
