- 10 lb. pork chitterlings
- 2 tsp. red pepper
- 1 large onion, chopped
- 3 Tbsp. vinegar
- salt and pepper to taste
Directions

1Wash chitterlings thoroughly.

2Remove some fat if there are dark spots on fat.

3Some fat must be left on chitterlings.

4Place chitterlings into a large pot.

5Add water.

6Season with vinegar, salt, red pepper and chopped onion.

7Cook for 4 hours over very low heat.

8Serve with collard greens and hot sauce.
