- 6 pork chops
- 2 c. canned tomatoes
- 3/4 c. uncooked rice
- 1 green pepper, sliced in 6 rings
- 1 large onion, sliced in 6 rings
- 3 c. tomato juice
- 1 tsp. dried basil
- 2 to 3 Tbsp. vegetable oil
Directions

1Brown chops in skillet in oil.

2Place rice in bottom of casserole dish.

3Arrange chops on top of rice.

4Place bell pepper rings, tomatoes and onion slices on top of each chop.

5Season with salt and pepper.

6Pour tomato juice over all.

7Sprinkle with basil.

8Cover and bake at 350° for 1 hour and 10 minutes.
