- 1 lb. lean pork
- salt, pepper and flour
- 2 1/2 Tbsp. margarine
- 1/4 c. cider vinegar
- 3/4 c. cream
- 1/6 c. Dijon mustard
Directions

1Trim pork; slice into 2-inch wide pieces.

2Flatten with a mallet.

3Coat pork with mix of flour, salt and pepper.

4Fry in 1 1/2 tablespoons margarine.

5Add cider vinegar to pan dregs; cook down.

6Add cream; simmer for 15 minutes.

7Add mustard and remaining 1 tablespoon margarine.

8Cook 2 minutes.
