  • 2 pork chops, fat only, diced
  • 1 ounce parsley
  • 1 ounce mint
  • 1 ounce basil
  • 1 ounce chives, snipped
  • 12 tomatoes, chopped
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons olive oil

Directions

    Heat a frying pan and fry the pork fat for 8-10 mins til crisp and golden.

    Drain on kitchen paper.

    Dress the herb leaves, tomatoes and pork fat in the dressing of balsamic vinegar and oil for serving.
