Pork Fried Rice

- 3 Tbsp. butter or margarine
- 3 eggs, well beaten
- 1 1/2 c. cubed cooked pork
- 4 c. cold cooked long grain white rice (1 1/3 c. before cooking)
- 3 green onions or scallions, sliced thin
- 1 (8 oz.) can green peas, drained
- 3 Tbsp. soy sauce
- 1/2 tsp. sugar
Directions

1In a large skillet, melt butter over moderate heat.

2Add eggs and stir with a fork until well cooked.

3Add cubed pork, rice and green onions.

4Cook over moderate heat for 5 minutes, stirring frequently.

5Add peas, soy sauce and sugar to rice mixture.

6Mix well.

7Continue cooking 5 to 10 minutes, stirring very frequently to prevent sticking until mixture is hot.

8Makes 6 servings.

9Good with bean sprout salad and Oriental style vegetables, followed by ice cream.
