Ingredients

  • 14 oz fresh wide rice noodles
  • 1 1/4 lb ground pork
  • 1 None medium Spanish onion, thinly sliced
  • 1 None medium red pepper, thinly sliced
  • 1 (4 inch) stalk fresh lemongrass, finely chopped
  • 2 tbsp light soy sauce
  • 1/4 cup lemon juice
  • 1 tbsp grated palm sugar
  • 1 None fresh long red chili, finely chopped
  • 1/2 bunch coarsely chopped fresh cilantro

Directions

    Place rice noodles in a large heatproof bowl. Cover with boiling water and separate strands with a fork. Drain.

    Oil a wok and place over high heat. Brown ground pork then remove from wok.

    Add onion, red pepper and lemongrass to wok. Saute until onion softens. Return ground pork to wok along with noodles, soy sauce, lemon juice and palm sugar. Stir-fry until hot. Stir in chili and cilantro.
