Ingredients
- 10 to 12 lb. pork roast
- 2 onions, chopped
- 2 cloves garlic, chopped
- salt and pepper to taste
Directions

1Make slits in roast with knife to a depth of approximately 3 inches deep every 5 to 6 inches.

2In a small bowl, mix garlic, onion, salt and pepper.

3Dampen mixture with water.

4Rub seasoning over roast.

5Heat small amount of oil in deep heavy iron pot.

6Brown roast well on all sides.

7After browning, add water and cover.

8Let cook on high heat for 5 minutes.

9Reduce heat and let simmer, turn occasionally.

10Bake 4 hours or until well done. For additional flavor, stuff roast and keep in freezer for 3 to 4 days before baking.
