  • 2 tsp. rosemary
  • 1 Tbsp. chopped garlic
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 boneless pork loin roast (about 4 lb.)
  • potatoes as desired
  • winter squash as desired
  • turnips as desired
  • parsnips as desired
  • carrots as desired

Directions

    Heat oven to 375°.

    Mix rosemary, garlic, salt and pepper and mash to paste.

    Rub roast with herb garlic paste.

    Roast, uncovered, basting 2 or 3 times with pan juices, for 1 1/4 hours, adding vegetables as desired.

    Or wrap in heavy foil and cook on grill.
