  • 1 lb boneless pork loin
  • 2 tablespoons smooth peanut butter
  • 2 tablespoons soy sauce
  • 13 cup minced onion
  • 1 garlic clove, minced
  • 1 tablespoon fresh limes or 1 tablespoon lemon juice
  • 2 teaspoons brown sugar
  • 1 dash hot pepper sauce
  • 1 tablespoon vegetable oil

    Trim pork and cut meat into 1/2 inch cubes.

    In a medium bowl, combine peanut butter, soy sauce, onion, garlic, lime juice, brown sugar, hot sauce and oil.

    Mix until well blended.

    Add pork and toss to coat.

    Marinate 2 hours at room temperature or overnight in the refrigerator.

    Soak bamboo skewers in water for 30 minutes.

    Thread 3 pieces pork onto each skewer.

    Broil satays 4 inches from heat, turning occasionally, until nicely browned outside, 8-10 minutes.
