Pork-Spinach Pie

- 1 (9-inch) deep frozen pie shell
- 1 1/2 c. shredded Monterey Jack
- 1/2 lb. bulk pork sausage
- 1/2 c. herb seasoned stuffing mix
- 5 oz. frozen chopped spinach, thawed and well drained
- 3 beaten eggs
- 1 1/2 c. light cream or milk
Directions

1Place frozen pie shell on a baking sheet.

2Bake in a 400° oven for 5 minutes.

3Remove from oven.

4Reduce oven to 325°.

5Sprinkle cheese in bottom of pie shell.

6Set aside.

7Meanwhile, in a skillet, cook sausage until brown; drain off fat.

8Stir in stuffing mix and spinach; spoon over cheese.

9Combine beaten eggs and light cream.

10Pour over sausage mixture.

11Bake uncovered in a 325° oven for 50 to 55 minutes or until knife comes out clean.

12Let stand 10 minutes.
