Pork With Peanut

- 2 tablespoons canola oil
- 3 -4 cloves minced garlic
- 1 cup chopped onion
- 12 cup chopped red bell pepper
- 12 cup chopped carrot
- 1 lb pork tenderloin, cut into 1/2 inch cubes
- 12 tablespoon paprika
- 12 tablespoon granulated sugar
- 12 teaspoon ground cumin
- 14 teaspoon cayenne pepper (more or less to taste)
- 1 quart chicken stock
- 1 cup creamy peanut butter
- salt and pepper
Directions

1In a large saucepan, heat the canola oil over medium heat.

2Add the garlic, onion, bell pepper, and carrots.

3Saute about 2 minutes, stirring often.

4Add the pork, paprika, sugar, cumin, and cayenne pepper.

5Add salt and pepper to taste.

6Brown the pork on all sides.

7Add the chicken stock, scraping the bottom and sides of the pan to deglaze it.

8Add the peanut butter and bring to a boil, stirring constantly.

9Reduce the heat and simmer, stirring occasionally, for about 25 minutes until the pork is tender.

10Serve with rice.
