- 2 tsp. minced garlic
- 2 tsp. dried dill weed
- 1 tsp. fennel seed, crushed
- 1 tsp. dried rosemary
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 3/4 tsp. salt
- 1/2 tsp. pepper
- 1/4 tsp. dried dill weed
Directions

1Debone meat and remove outside fat.

2Fill with a mixture of the next 7 ingredients.

3Roll roast jelly-roll fashion and tie with a string.

4Rub outside of roast with mixture of last three ingredients.

5Roast in a 350° oven for 35 to 45 minutes per pound or to an internal temperature of 170°.

6Allow roast to stand for 15 minutes for easier carving.

7Slice and serve on hard rolls.
