  • 1 (4 lb.) pork shoulder
  • 1/2 c. fresh parsley, snipped
  • 2 tsp. minced garlic
  • 2 tsp. dried dill weed
  • 1 tsp. fennel seed, crushed
  • 1 tsp. dried rosemary
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 3/4 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 tsp. dried dill weed

Directions

    Debone meat and remove outside fat.

    Fill with a mixture of the next 7 ingredients.

    Roll roast jelly-roll fashion and tie with a string.

    Rub outside of roast with mixture of last three ingredients.

    Roast in a 350° oven for 35 to 45 minutes per pound or to an internal temperature of 170°.

    Allow roast to stand for 15 minutes for easier carving.

    Slice and serve on hard rolls.
