  • rolled pork loin
  • lots of salt
  • lots of coarse ground pepper
  • paprika
  • thyme
  • lots of fresh minced garlic
  • a little dry mustard
  • lots of fennel seed (not powder)

Directions

    Rub all spices in by hand; let set overnight in refrigerator to blend all together.

    (You can use a little bit of oil to help the spices to stick.)

    Cook to cooking instructions for cooking pork (325° for 30 to 35 minutes for every pound of meat), or use a meat thermometer until it reaches 170° or well done.
