- 2 medium sweet potatoes, cut into 1/2-inch cubes
- 2 yukon gold potatoes, cut into 1/2-inch cubes
- 2 teaspoons fennel seeds, crushed
- 1 teaspoon oregano leaves, dried
- 1 teaspoon paprika
- 12 teaspoon garlic powder
- 12 teaspoon salt
- 12 teaspoon pepper
- 2 lbs boneless pork loin roast
- 1 cup chicken broth
Directions

1Place potatoes in 3 1/2 to 4- quart slow cooker.

2In small bowl, combine fennel seed, oregano, paprika, garlic powder, salt and pepper; mix well.

3Rub into pork roast.

4Place pork on potatoes.

5Pour broth over pork and potatoes.

6Cover; cook on low setting for 8 to 10 hours.

7Remove pork from slow cooker; place on serving platter.

8Cut pork into slices.
