  • 4 tablespoons extra virgin olive oil
  • 4 portabella mushrooms
  • 4 hamburger buns
  • 2 12 ounces ricotta cheese
  • 4 pieces sun-dried tomatoes, shredded
  • 3 basil leaves
  • salt & freshly ground black pepper

Directions

    Heat the broiler to high.

    Pour 1 tbsp oil over each mushroom, then season.

    Broil for 7 minutes, then turn over and broil for a further 2 minutes.

    Split the buns and broil the cut sides.

    Spread one of the broiled sides of each bun with ricotta and sprinkle with sun-dried tomato.

    Top with a mushroom, basil and a bun lid.
