Portuguese Potatoes

  • 10 to 12 medium sized red potatoes, boiled in jackets
  • 1 lb. Velveeta cheese, cubed
  • 1 small chopped onion
  • 1 medium jar pimentos
  • 1 box seasoned croutons
  • 2 Tbsp. parsley flakes
  • 1 tsp. paprika
  • 1 tsp. garlic salt
  • 2 sticks margarine, melted

Directions

    After boiling potatoes, cut into cubes.

    Do not peel.

    Place cubed potatoes in a large greased casserole dish.

    Sprinkle cubed cheese over potatoes.

    Follow with onion, pimentos, parsley flakes, paprika and garlic salt.

    Place croutons on top of casserole.

    Melt margarine and pour over top.

    Bake 30 to 45 minutes in a 350° oven. Makes 10 to 12 large servings.
