Portuguese Rice Pudding

- 1 c. rice
- 5 c. milk
- 1/2 to 3/4 c. sugar
- 1 piece orange rind
- 1 cinnamon stick
- pinch of salt
- 1 Tbsp. margarine
Directions

1In medium-size pan, bring the milk to a boil.

2Drizzle the rice in slowly so that the milk continues to boil.

3Add sugar, cinnamon, salt, rind and butter; stir occasionally.

4Boil, uncovered, for about 5 minutes.

5Remove the rind and cinnamon stick and pour the mixture into a 2-quart bowl or individual dishes.

6Sprinkle lightly with cinnamon.

7Serve with a dollop of light cream.

8Serves 6 to 8.
