- 2 lb. yellow summer squash, sliced
- 2 eggs, beaten
- 1 c. mayonnaise
- 1 c. grated Parmesan cheese
- 1 small onion, chopped
- salt to taste
- 1/4 tsp. pepper
- 1/2 c. soft bread crumbs
- 1 Tbsp. melted margarine
Directions

1Cook squash in boiling water until tender.

2Drain thoroughly and drain again, cool slightly.

3To beaten eggs add mayonnaise, cheese, onion, salt and pepper.

4Blend well.

5Stir squash in gently.

6Pour into a buttered 1 1/2-quart casserole.

7Combine bread crumbs and melted margarine and sprinkle over the top.

8Bake at 350° for 30 minutes or until firm.

9Makes 5 servings.
