  • 2 lb. crookneck or patty pan squash
  • 1 small onion, finely chopped
  • 1/4 c. chopped green pepper
  • 3/4 c. Parmesan cheese
  • 2 eggs
  • 1 c. mayonnaise
  • 1/4 tsp. thyme
  • paprika

Directions

    Cook squash until tender. Drain well, beat eggs, blend in mayonnaise, onion, pepper and thyme.

    Stir in well-drained squash. Spoon mixture into a greased shallow casserole.

    Sprinkle evenly with cheese and paprika.

    Bake 25 minutes in a 375° oven or until puffed and lightly browned.
