- 1 large possum (or 2 lb. ground beef)
- 2 (16 oz.) cans Ro-Tel tomatoes with green chilies
- 2 cans green chilies, chopped
- 1 medium onion, chopped
- garlic powder to taste
- salt and pepper to taste
- 2 (1 lb.) boxes mild Mexican Velveeta cheese
- 1/2 c. milk
- corn chips
Directions

1In a large, deep skillet, brown the possum (or ground beef) and onion.

2Remove the mixture from the pan and drain it.

3In the same pot, mix the beans, chilies and tomatoes; cook on medium heat until the mixture is cooked down just a little.

4Return the possum and onion to the pot.
