Ingredients

  • 1 large possum (or 2 lb. ground beef)
  • 2 (16 oz.) cans Ro-Tel tomatoes with green chilies
  • 2 cans green chilies, chopped
  • 1 medium onion, chopped
  • garlic powder to taste
  • salt and pepper to taste
  • 2 (1 lb.) boxes mild Mexican Velveeta cheese
  • 1/2 c. milk
  • corn chips

Directions

    In a large, deep skillet, brown the possum (or ground beef) and onion.

    Remove the mixture from the pan and drain it.
  3. 3
    In the same pot, mix the beans, chilies and tomatoes; cook on medium heat until the mixture is cooked down just a little.

    Return the possum and onion to the pot.
