  • 6 to 8 large potatoes, peeled and mashed
  • 1 c. sour cream
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • 2 Tbsp. chopped chives or green onion tops
  • 1/4 c. butter
  • 1 pkg. frozen spinach, thawed and drained
  • 1 c. (4 oz.) shredded Cheddar cheese

Directions

    Combine all ingredients except cheese.

    Place in a greased 2-quart dish.

    Bake, uncovered, at 400° for 15 minutes.

    Top with cheese and bake 5 minutes longer.
