- 1/2 lb. butter or margarine
- 2 c. sugar
- 3 eggs
- 1 lb. pot cheese (Ricotta)
- 1 tsp. baking soda
- 4 c. flour
- 1 Tbsp. almond flavoring
- 1/2 tsp. salt
Directions

1Grease and flour cookie sheets.

2Cookies should be light brown on bottom and white on top.

3Cream butter and sugar.

4Add eggs, one at a time.

5Gradually add pot cheese, almond flavoring, flour and other ingredients.

6Dough will be sticky.

7Use two spoons to spoon into pan, not too much.

8Bake at 375° for 10 to 12 minutes. Makes approximately 100 cookies.
