  • 1/2 lb. butter or margarine
  • 2 c. sugar
  • 3 eggs
  • 1 lb. pot cheese (Ricotta)
  • 1 tsp. baking soda
  • 4 c. flour
  • 1 Tbsp. almond flavoring
  • 1/2 tsp. salt

Directions

    Grease and flour cookie sheets.

    Cookies should be light brown on bottom and white on top.

    Cream butter and sugar.

    Add eggs, one at a time.

    Gradually add pot cheese, almond flavoring, flour and other ingredients.

    Dough will be sticky.

    Use two spoons to spoon into pan, not too much.

    Bake at 375° for 10 to 12 minutes. Makes approximately 100 cookies.
