Ingredients

  • 3 lbs beef roast
  • 2 tablespoons oil
  • 1 cup chopped onion
  • 4 cups beef broth
  • 5 carrots, 1 in chunks
  • 5 potatoes, 2 in chunks
  • 1 1/2 cups sliced celery
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon oregano
  • 1 bay leaf
  • 1/2 teaspoon thyme
  • 1 cup diced tomato

Directions

    In dutch oven, brown roast in oil.

    Add onions and saute briefly.

    Add broth; cover and cook on low for 2 hours;,add more broth if necessary.

    Add all other ingredients.

    Bring to a boil.

    Reduce heat to low and cook for 1-1/2 hours more.
