- 3 lbs beef roast
- 2 tablespoons oil
- 1 cup chopped onion
- 4 cups beef broth
- 5 carrots, 1 in chunks
- 5 potatoes, 2 in chunks
- 1 1/2 cups sliced celery
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon oregano
- 1 bay leaf
- 1/2 teaspoon thyme
- 1 cup diced tomato
Directions

1In dutch oven, brown roast in oil.

2Add onions and saute briefly.

3Add broth; cover and cook on low for 2 hours;,add more broth if necessary.

4Add all other ingredients.

5Bring to a boil.

6Reduce heat to low and cook for 1-1/2 hours more.
