Potato Bacon Salad

Ingredients
- 1 1/2 lb. red potatoes, washed and quartered
- 1/4 c. vegetable oil
- 1/4 c. red wine vinegar
- salt and pepper
- 1/2 lb. bacon, cooked crisp, drained and crumbled
- 3 eggs, hard-boiled and chopped
- 1 small onion, grated
- 1 bunch scallions, chopped
- 2 Tbsp. sweet relish
Directions

1Boil potatoes until just tender, about 15 minutes.

2Drain and put in large bowl.

3Cut into bite size pieces.

4In measuring cup, whisk oil and vinegar and add salt and pepper.

5Pour over potatoes and toss.

6Let sit for 30 minutes and add bacon, eggs, onion, scallions and relish.

7Toss gently until well mixed.

8Chill covered.

9Serves 4.
