Potato Bacon Salad

Ingredients

  • 1 1/2 lb. red potatoes, washed and quartered
  • 1/4 c. vegetable oil
  • 1/4 c. red wine vinegar
  • salt and pepper
  • 1/2 lb. bacon, cooked crisp, drained and crumbled
  • 3 eggs, hard-boiled and chopped
  • 1 small onion, grated
  • 1 bunch scallions, chopped
  • 2 Tbsp. sweet relish

Directions

    Boil potatoes until just tender, about 15 minutes.

    Drain and put in large bowl.

    Cut into bite size pieces.

    In measuring cup, whisk oil and vinegar and add salt and pepper.

    Pour over potatoes and toss.

    Let sit for 30 minutes and add bacon, eggs, onion, scallions and relish.

    Toss gently until well mixed.

    Chill covered.
