  • 5 medium potatoes
  • 1 c. cream of chicken soup
  • 1/2 (8 oz.) carton sour cream
  • 1 small onion, chopped
  • 1/2 c. Parmesan cheese
  • 1 c. hard-cooked eggs, chopped
  • 1 Tbsp. parsley
  • salt and pepper

    Cook potatoes until almost done; dice.
