- 4 potatoes, peeled & grated
- 1 tablespoon parsley flakes
- 3 eggs
- 60 g butter, melted
- 1 onion, finely chopped
- 13 cup plain flour
- salt
- pepper
Directions

1Drain off as much liquid as possible from potatoes, then toss with the onion, parsley and flour.

2Beat eggs with a little salt & pepper and then add to potato along with the melted butter and mix to combine.

3Pour into a well greased casserole dish and bake at 200.C for approx 10 minutes.

4reduce heat to 180.C and cook for a further 30 mins or until golden & set.
