  • 4 potatoes, peeled & grated
  • 1 tablespoon parsley flakes
  • 3 eggs
  • 60 g butter, melted
  • 1 onion, finely chopped
  • 13 cup plain flour
  • salt
  • pepper

Directions

    Drain off as much liquid as possible from potatoes, then toss with the onion, parsley and flour.

    Beat eggs with a little salt & pepper and then add to potato along with the melted butter and mix to combine.

    Pour into a well greased casserole dish and bake at 200.C for approx 10 minutes.

    reduce heat to 180.C and cook for a further 30 mins or until golden & set.
