  • 1 jar drained pickled beets
  • 2 large potatoes, cooked
  • 1/4 c. parsley
  • 1/3 c. scallions, chopped, or regular sweet onion
  • 1 cucumber, diced
  • 1/4 tsp. Dijon mustard
  • 4 Tbsp. olive oil
  • 5 Tbsp. vegetable oil
  • 2 Tbsp. wine vinegar
  • salt and pepper to taste

Directions
