  • 1 1/2 c. all-purpose flour
  • 4 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 c. milk
  • 1 c. mashed potatoes
  • 3 Tbsp. shortening

Directions

    Combine dry ingredients; cut in shortening until mixture resembles coarse meal.

    Add potatoes, stirring lightly.

    Add milk and stir until a soft dough is formed.

    Turn lightly 10 to 12 times.

    Roll dough to 1/2-inch thickness; cut with a 2 1/2-inch biscuit cutter.

    Place biscuits on a lightly greased baking sheet and bake at 400° for 15 minutes or until lightly browned.
