- 1/3 c. mashed cooked potato
- 1 c. potato water
- 1 Tbsp. yeast
- pinch of sugar
- 1 1/2 tsp. salt
- 1 Tbsp. oil
- 3 1/4 c. unbleached flour
Directions

1In a mixing bowl, stir mashed potato into the reserved water used to boil the potato.

2If the water is cool, warm it slightly. Sprinkle yeast over the potato water mixture to dissolve.

3Add the sugar, salt and oil.

4Beat in nearly all the flour.

5Place the dough on a flat surface and knead for 8 to 10 minutes, adding flour to prevent sticking.

6Place dough in an oiled bowl, turn over so the top is coated with oil, cover with a cloth and let rise in a warm spot until doubled in bulk (about 1 1/2 hours).
