  • 1/3 c. mashed cooked potato
  • 1 c. potato water
  • 1 Tbsp. yeast
  • pinch of sugar
  • 1 1/2 tsp. salt
  • 1 Tbsp. oil
  • 3 1/4 c. unbleached flour

Beat in nearly all the flour.
  5. 5
Place the dough on a flat surface and knead for 8 to 10 minutes, adding flour to prevent sticking.
