Potato Cabbage Soup

- 1 small yellow onion, peeled and finely chopped
- 2 Tbsp. olive oil
- 2 tsp whole caraway seeds
- 1 tsp salt
- 1/s tsp black pepper
- 4 cups cabbage finely shredded
- 4 medium red potatoes peeled and cut in 1/3 inch cubes
- 6 cups stock
Directions

1over medium-low heat, saute the onion in olive oil for 5-7 minutes.

2Add caraway seeds, salt and pepper and saute another minute

3Add the cabbage and cook for 2-3 minutes until it starts to wilt.

4Add potatoes and stock, cover and bring to a boil. Reduce heat and simmer 20 minutes on medium-low or until the potatoes are tender
