Potato Cabbage Soup

Ingredients

  • 1 small yellow onion, peeled and finely chopped
  • 2 Tbsp. olive oil
  • 2 tsp whole caraway seeds
  • 1 tsp salt
  • 1/s tsp black pepper
  • 4 cups cabbage finely shredded
  • 4 medium red potatoes peeled and cut in 1/3 inch cubes
  • 6 cups stock

Directions

    over medium-low heat, saute the onion in olive oil for 5-7 minutes.

    Add caraway seeds, salt and pepper and saute another minute
  3. 3
    Add the cabbage and cook for 2-3 minutes until it starts to wilt.

    Add potatoes and stock, cover and bring to a boil. Reduce heat and simmer 20 minutes on medium-low or until the potatoes are tender
