  • 2 c. leftover cold mashed potatoes
  • 2 eggs
  • handful saltine crackers, crushed
  • 1 Tbsp. bacon grease

Directions

    Mix potatoes, eggs and cracker crumbs. In a skillet, melt grease and drop a spoonful of potato mixture into skillet. Let fry until brown and crisp. Flip and brown the other side.
