  • 1 (20 oz.) pkg. frozen small French fries
  • 1 lb. American processed cheese, grated
  • 3/4 c. chopped celery
  • 3/4 c. chopped green bell peppers
  • 1/2 c. chopped carrots
  • 1/2 c. pimientos
  • 1 stick margarine
  • 1 can cream of mushroom soup
  • 1/4 c. flour
  • 2 c. milk

    Saute pepper and celery in margarine.

    Add flour, soup and milk.

    Mix well.

    Add carrots and pimientos.

    Spread potatoes in long baking dish and pour mixture over them.

    Add 3/4 of the cheese.

    Cook 25 minutes at 400°, then add remainder of cheese on top.

    Bake 5 more minutes or until cheese melts.
