  • 2 lb. frozen hash browns, thawed
  • 2 c. grated Cheddar cheese
  • 2 Tbsp. dried minced onion
  • 1/2 tsp. pepper
  • 2 c. sour cream
  • 1/2 c. melted margarine
  • 1 tsp. salt
  • 1/2 c. crumbled corn flakes
  • 1 can cream of mushroom (or chicken or celery) soup

Directions

    Mix hash browns with sour cream and margarine. Add 1 cup of the grated cheese, onion, salt and pepper. Slowly mix in the can of soup. Pour into a 13 x 9-inch baking dish. Mix remaining 1 cup cheese with corn flake crumbs. Sprinkle on top of potato mixture in dish. Bake 40 to 60 minutes at 350°, uncovered.
