  • 8 baked potatoes, peeled, cooled and grated
  • 1 c. melted oleo
  • 1 c. cream of mushroom soup
  • 1 c. sour cream
  • 3 green onions, cut up
  • 1 c. cornflake crumbs
  • 2 c. grated Cheddar cheese

Directions

    Mix soup, 1 cup of grated cheese, sour cream and the green onions.

    Add to spuds and oleo; stir gently.

    Add salt and pepper to taste.

    Place in casserole dish.

    Cook 30 minutes at 350°. Sprinkle with a mixture of 1 cup Cheddar cheese and cornflake crumbs.

    Bake another 15 minutes.
