- 4 cups potatoes peel & dice
- 1/2 cup onions finely chopped
- 1 cup carrots grated
- 1 teaspoon salt optional
- 1/4 teaspoon black pepper
- 1 tablespoon parsley leaves flakes
- 4 teaspoons chicken broth low sodium
- 6 cups milk, skim
- 1/2 cup flour, all-purpose
- 1 x paprika sprinkle
Directions

1Dutch oven or kettle, combine potatoes, onion, carrot, salt, pepper, parsley flakes and bouillon.

2Add enough water to just cover veggies; cook until veggies are tender, about 15 to 20 min.

3Do not drain.

4Measure 1 1/2 cup milk and add flour to milk, stirring with wire whisk.

5Add to the pot, stir then add the remaining milk.

6Stir until blended.

7Simmer for 15 min on low heat and it has thickened.

8Garnish with paprika.
