  • 2 slices bacon (to taste)
  • 13 cup chopped onion
  • 2 cups diced raw potatoes
  • 12 cup sliced fresh carrot
  • 2 cups chicken stock
  • 1 12 teaspoons salt
  • 14 teaspoon ground sage
  • 18 teaspoon ground black pepper
  • 14 teaspoon paprika
  • 1 teaspoon dried parsley flakes
  • 1 cup milk
  • 1 cup heavy cream
  • 2 tablespoons flour
  • cheddar cheese

    Fry bacon until crisp in a saucepan large enough for soup.

    Remove bacon.

    Sweat onion and carrot until limp.

    Add potatoes, chicken stock and salt.

    Cover and cook until vegetables are tender.

    Add seasonings.

    Blend flour with 1/4 C milk and add with the remaining milk and heavy cream to the vegetable mixture, stirring constantly.

    Heat until slightly thickened.

    Crumble bacon and sprinkle over the soup.
