- 1/2 c. diced celery
- 1/2 c. chopped onion
- 1 shredded carrot
- water to cover
- 1 c. ham, finely diced
- 1 c. Velveeta, diced
- 4 c. milk
- seasonings to taste
Directions

1Cook vegetables in water until tender; add ham (I sometimes use part summer sausage), cheese and milk.

2Simmer gently until cheese melts.

3May be thickened, if desired.

4Garnish with parsley on side and croutons afloat.
