- 3 medium potatoes
- 1 large onion
- salt and pepper to taste
- 2 tsp. chopped parsley
- 1/4 lb. raw bacon, diced (to be omitted on fast days)
- 2 Tbsp. butter
- 1 c. milk, boiled
- 3 Tbsp. grated cheese
Directions

1Pare potatoes and cut into very thin slices.

2Chop onion. Place a layer of vegetables in a greased baking dish.

3Sprinkle with seasonings, parsley and diced bacon (rind removed), and dot with butter.

4Repeat layers until all ingredients are used, finishing with potatoes.

5Pour in milk and sprinkle top with grated cheese.

6Cover and bake in preheated moderate oven (350°) for 45 minutes.

7Uncover and continue cooking until potatoes are done and top layer is brown.

8Makes 4 servings.
