Potato Corn Bake

Ingredients
- 1/2 lb. bacon, cooked and coarsely crumbled
- 15 oz. Green Giant cream-style corn
- 2 c. milk
- 3 Tbsp. margarine
- salt and pepper to taste
- 2 c. instant mashed potatoes
- 1/2 c. sour cream
- 1/4 c. Parmesan cheese
- 1/2 c. bell pepper
- 1/3 c. chopped onion
Directions

1Save 1 tablespoon bacon grease, saute onion and bell pepper until tender.

2Stir in milk, corn, margarine, salt and pepper. Cook on medium heat until bubbly.

3Remove from heat and stir in potato flakes and sour cream.

4Blend well.

5Spoon into greased pan, top with Parmesan cheese.

6Bake on 375° for 20 to 25 minutes.
