- 1 (16 oz.) can beans (red, kidney, chickpeas or a combination)
- 1 Tbsp. chopped green pepper
- 1 Tbsp. chopped pimiento
- 1 Tbsp. chopped green onion
- 2 Tbsp. oil
- 1/4 c. vinegar
- 1/2 tsp. oregano
- freshly ground black pepper (to taste)
- 3 sprigs parsley, chopped
Directions

1Drain the beans; combine the beans, green pepper, pimiento and onion in a bowl.

2Mix together oil, vinegar, oregano, parsley and pepper.

3Pour over the vegetables and mix well.

4Marinate in the refrigerator at least 3 hours.
