- 3/4 c. chopped green pepper
- 1/3 c. chopped onion
- 2 3/4 c. vegetable broth
- 1 1/2 c. finely chopped potato
- 1/4 tsp. pepper
- 1/4 c. cornstarch
- 2 1/4 c. skim milk
- 2 1/4 c. frozen whole kernel corn
Directions

1Cook green pepper and onion in a saucepan coated with vegetable spray over medium heat, stirring constantly 5 minutes or until tender.

2Stir in broth, chopped potato and pepper.

3Bring to a boil; reduce heat and simmer 5 to 7 minutes or until potatoes are tender.

4Combine cornstarch and milk, stirring until smooth. Gradually add to potato mixture, stirring constantly.

5Stir in corn.

6Boil over medium heat, stirring constantly.

7Serve immediately.
