  • 1 to 1 1/2 c. mashed potatoes or sweet potatoes
  • 1 can drained corn (save liquid)
  • 1/4 c. flour
  • 1 egg
  • 1 small onion, diced

    Mix all ingredients well.

    Add corn liquid with just enough mix to make moderately thick dough.

    Shape into patties.

    Dredge in additional flour.
