Potato-Corn Soup

Ingredients

  • 1 c. chopped onion
  • 1 c. water
  • 2 1/2 c. diced potatoes
  • 1 c. sliced carrots
  • 2 bouillon cubes (vegetable or chicken)
  • 3 c. milk
  • 2 c. (16 oz.) can corn, drained
  • 1/2 tsp. pepper
  • 3 c. shredded Cheddar cheese
  • 3 Tbsp. flour

Directions

    Combine and simmer onion, water, potatoes, carrots and bouillon cubes until potatoes are tender, about 15 to 20 minutes. Stir in milk, corn and pepper.

    Continue simmering.

    Mix flour and cheese, then add to soup, simmer and stir until cheese is melted. Great with cornbread.
