Ingredients

  • 1 (6 oz.) box hash brown potatoes with onions
  • 1 (16 oz.) container crab meat or imitation, finely chopped
  • 2/3 c. mayonnaise
  • 2 eggs
  • 1/2 c. dry plain bread crumbs
  • 1/4 c. chopped parsley
  • 1/4 c. chopped red or green pepper
  • 1 Tbsp. lemon juice
  • 1/4 tsp. pepper
  • 1/8 tsp. ground red pepper
  • 1/4 c. corn oil

    Prepare potatoes according to package directions; drain and pat dry.

    Place in large bowl.

    Add all remaining ingredients except oil.

    Stir until well blended.

    Shape into 8 patties. Place on waxed paper lined tray.

    Cover and refrigerate 2 hours. In large skillet heat oil over medium heat.

    Add patties; cook until browned on both sides, about 10 minutes.
