Potato Crepes

  • 1 (8 oz.) pkg. cream cheese (room temperature)
  • 1/2 tsp. salt
  • 1 1/2 c. grated Swiss cheese
  • 4 c. raw potatoes, grated
  • 3 to 4 Tbsp. chopped chives
  • 3 Tbsp. flour
  • 2 eggs
  • 1/2 tsp. coarsely ground pepper
  • 3 to 4 Tbsp. heavy cream
  • 1/2 c. mushrooms, chopped and sauteed

Directions

    Soften cream cheese in mixing bowl.

    Add flour and beat until smooth.

    Add eggs, salt and pepper.

    Beat with electric mixer. Stir in cheese, potatoes, cream, chives and mushrooms.

    Lightly oil electric skillet and heat to temperature just below that recommended for pancakes.

    When heated, add small amount of butter and ladle potato batter into skillet to make crepes 3 inches in diameter.
