- 1 (8 oz.) pkg. cream cheese (room temperature)
- 1/2 tsp. salt
- 1 1/2 c. grated Swiss cheese
- 4 c. raw potatoes, grated
- 3 to 4 Tbsp. chopped chives
- 3 Tbsp. flour
- 2 eggs
- 1/2 tsp. coarsely ground pepper
- 3 to 4 Tbsp. heavy cream
- 1/2 c. mushrooms, chopped and sauteed
Directions

1Soften cream cheese in mixing bowl.

2Add flour and beat until smooth.

3Add eggs, salt and pepper.

4Beat with electric mixer. Stir in cheese, potatoes, cream, chives and mushrooms.

5Lightly oil electric skillet and heat to temperature just below that recommended for pancakes.

6When heated, add small amount of butter and ladle potato batter into skillet to make crepes 3 inches in diameter.
